97/100 Stuart Knox   Ink black heart into a glass-coating deep purple rim. Dark fruits, lifted North African spices and black olive tapenade on the nose. Deep and dense on the palate, dark fruits, loam and bay leaf show early then roll into a melange of spices, blood and stones. Undoubtedly full-bodied but the fine brush of acidity and gravelly tannins control it and bring a vitality that's unexpected. Lingers forever on the palate. 95/100 Ralph Kyte-Powell   A big Barossa red in a heavy bottle, this has dense, deep, saturated purplish colour and a powerful nose of crushed dark berries, dried currants and roasting pan juices, skilfully balanced with a well-measured seasoning of toasty vanillin oak. It’s full-bodied, ripe and complete, with a flowing velvety texture and a solid backbone of ripe tannins supporting an appropriately long finish. Cos lettuce and radishes shine in this spring salad. CLARE FALZON, HENTLEY FARM RESTAURANT SERVES 2  2 cos lettuce heads 100g unsalted butter ½ teaspoon Dijon mustard 1 tbsp yellow mustard seeds, soaked overnight and drained 1 tsp chilli flakes ½ cup raw cashews, crushed 6 breakfast radishes, including leaves ‍ Serve with: edible flowers to garnish. 1 Quarter the cos lettuce heads and lay directly on a plate. ‍2 Melt the butter with the Dijon mustard in a pan over a low heat, then add mustard seeds, chilli flakes and cashews.…
